Vinitaly is over…..we had a great goal: the Italian Premier visited the Venetian Pavillion and tasted our Amarone Classico Riserva 2015, our iconic wine.
We are very proud for the privilege to be chosen by the highest authority of Italian government.
Our Amarone made with the traditional method on open natural air. After the air-drying process, or appassimento, which lasts about 90 days, the grapes are pressed in mid-December and fermented in stainless steel tanks at controlled temperatures.
What Does “Appassimento” Mean?
Appassimento translates to “fading” or “withering” in Italian and refers to a winemaking process where dried grapes, instead of fresh grapes, are fermented. When winemakers use the appassimento process, they create wines that are full-bodied and packed with intense fruit, balanced acidity and sometimes sweetness.
