Altitude
500 meters above sea level, on a land of ancient disintegrating lavas in the cru sub-area called Purano. At one time only Amarone was produced on these hills, then the disciplinary in 1967 extended the production of Amarone to the plain as well.

Soil type
Basalt of volcanic origin, soil very rich in minerals, terraced on ancient dry stone walls of more than 200 years (called "marogne" in Veneto) facing south planted with a density of 5290 vines per hectare.

From mid-October to the end of November with 6 kg wooden trays. Manual harvest with selection of the grapes.
Withering
Withering process according to the ancient method with natural ventilation of the hills until February with weight loss equal to 45%
Pressing and Maceration
Destamination and pressing with soft manual peel breaking. Slow maceration.
Fermentation
Slow natural fermentation with indigenous natural yeasts
Vinification
Temperature-controlled (10-26 ° C) fermentation in cherry wood vats and soft peel break, with delestage every 20 days. Natural malolactic fermentation.
Refinement
French oak tonneaux 500 lt. for 2 years, 2 years in the bottle in an underground cellar.
Bottling
800 bottles in all per year, numbered from 1/800. Capacity 500 ml.

Aroma
Hints of cherry, both nose and taste. Scent of violet. Caramel, toasting and vanilla (given by aging in French oak barrels). On the palate it is enveloping, the tannin is sweet.
Typical combinations
Dessert wine of vibrant shades. Thanks to its elegant and powerful structure, it goes very well with fresh and aged cheeses, blue cheeses, of both cow, goat and sheep origin, but above all as an accompaniment to all kinds of baked desserts, from the typical Veronese pandoro to panettone, chocolate. both sweet and bitter and dry biscuits.
Aging
This wine will keep all its characteristics unaltered for more than 20 years as long as it is kept at a constant temperature below 18 °, not exposed to light and not subjected to thermal shock.
